Bruschetta

Quick and Easy Appetizer for a crowd

Equipment

  • garlic press

Ingredients
  

  • 1 fresh baguette
  • ¼ cup of butter melted
  • 2-3 cloves of garlic minced
  • 6 fresh roma tomatoes diced and juices drained
  • ¼ med red onion, minced small
  • 4-6 fresh basil leaves chopped fine
  • 2 T olive oil
  • 1 T Balsamic or red wine vinegar I prefer red wine vinegar
  • grated parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350º
  • slice the baguette into ½" thick slices
  • melt butter and add the 2 cloves of minced garlic
  • butter each piece of baguette using the garlic butter then toast in oven at
  • 350 until golden brown (10 minutes)
  • while the bread is toasting
  • dice and strain the tomatoes and put into a medium sized mixing bowl. Discard the juices and put the tomatoes in a fresh serving bowl.
  • To the tomatoes, add the remaining ingredients, onions, clove of minced garlic, olive oil, red wine vinegar (or balsamic if using that) , basil, grated parmesan cheese and salt and pepper
  • stir to combine.
  • Serve the bruschetta alongside the toasted baguette slices with a spoon for topping each toast. I prefer not to pre top the toasts so they don't get soggy

Notes

To Serve: Place the toasted baguette slices in a bowl or basket and
place a bowl of the tomato topping along side. Let everyone fill their own
bruschetta so the toast doesn't get soggy!
