Cheeseburger Rice

A quick family friendly Skillet Meal that is ready in 20 minutes. Tastes just like a cheeseburger with the addition of your favorite toppings. Serve with a salad or fresh veggies for a complete meal.

Equipment

  • skillet large enough for 4 cups of rice and beef

Ingredients
  

  • 500 g lean ground beef
  • 1 Tbsp oil
  • 1/2 onion diced
  • 2 cups minute rice
  • 2 cups water
  • 1 cup cheddar cheese shredded
  • 1/2 cup ketchup
  • 3 Tbsp mustard prepared
  • salt
  • pepper

Instructions
 

  • Add oil to your skillet, add diced onions and sauté until fragrant (one to two minutes). Add ground beef, season with salt and pepper and scramble fry until no longer pink (5-7 minutes)
  • drain, then add water, ketchup and mustard and stir to combine (taste and add more ketcup or mustard to your liking-think cheeseburger).
  • Add minute rice, stir and reduce heat to low/simmer. Cover and let simmer over med heat for 5 minutes.
  • Remove cover and sprinkle shredded cheese over top, return cover and let simmer an additional 5 minutes until done.

Notes

The basic version (above) is a great starting place and good for kids. This is where mine started.   Experiment to your heart's content just keep the basics fairly consistent.  Ground meat of choice, minute rice, equal water to minute rice ratio and cheese of choice and enough add ins, to make it your own.
