1 waffle maker or waffle iron
Ingredients
2½
cups
all purpose flour
4
tsp
baking powder
1⅓
tsp
salt

Tbsp
granulated sugar
2
cups
milk
4
egg yolks
beaten thick
8
Tbsp
melted fat (bacon grease or vegetable oil)
*for extra crisp waffles increase to 12 Tbsp
4
egg whites
beaten stiff
Fresh Fruit Sauce
1
lb
fresh berries(blueberries, strawberries etc.)
whatever you like
1
cup
water
½
cup
sugar

Tbsp
cornstarch
mixed with enough water to mix into a paste
Instructions
Sift together flour, baking powder, salt and sugar
combine milk and melted fat (or vegetable oil) with beaten egg yolks in a bowl
Combine the mixtures, adding wet to dry ingredients and stirring only enough to combine.
Beat the egg whites in a separate bowl and fold them into the mixture (above)
Heat waffle iron
Cook waffles on hot iron or waffle maker until golden brown and crisp.
If you want extra crisp waffles add 4 extra Tablespoons of melted fat or oil to the wet mixture
Fresh Fruit Sauce
1 lb of fresh berries of your choice (strawberry, blueberry, raspberry, blackberry) into a medium saucepan
add water and bring to a boil
add sugar and simmer for a few minutes to dissolve sugar
combine cornstarch with enough water to make a paste, then add it to the sauce and bring back to a boil for about 3 minutes until thick.
Serve over waffles
Notes
These are delicious and light waffles with a good crisp. Serve with a fruit sauce or with maple syrup and butter.
