Homemade Waffles

These are delicious and tender waffles that you will absolutely love

Equipment

  • 1 waffle maker or waffle iron

Ingredients
  

  • cups all purpose flour
  • 4 tsp baking powder
  • 1⅓ tsp salt
  • 2 Tbsp granulated sugar
  • 2 cups milk
  • 4 egg yolks beaten thick
  • 8 Tbsp melted fat (bacon grease or vegetable oil) *for extra crisp waffles increase to 12 Tbsp
  • 4 egg whites beaten stiff

Fresh Fruit Sauce

  • 1 lb fresh berries(blueberries, strawberries etc.) whatever you like
  • 1 cup water
  • ½ cup sugar
  • 2 Tbsp cornstarch mixed with enough water to mix into a paste

Instructions
 

  • Sift together flour, baking powder, salt and sugar
  • combine milk and melted fat (or vegetable oil) with beaten egg yolks in a bowl
  • Combine the mixtures, adding wet to dry ingredients and stirring only enough to combine.
  • Beat the egg whites in a separate bowl and fold them into the mixture (above)
  • Heat waffle iron
  • Cook waffles on hot iron or waffle maker until golden brown and crisp.
  • If you want extra crisp waffles add 4 extra Tablespoons of melted fat or oil to the wet mixture

Fresh Fruit Sauce

  • 1 lb of fresh berries of your choice (strawberry, blueberry, raspberry, blackberry) into a medium saucepan
  • add water and bring to a boil
  • add sugar and simmer for a few minutes to dissolve sugar
  • combine cornstarch with enough water to make a paste, then add it to the sauce and bring back to a boil for about 3 minutes until thick.
  • Serve over waffles

Notes

These are delicious and light waffles with a good crisp.  Serve with a fruit sauce or with maple syrup and butter.
