bring a large pot of water to the boil, and cook the lasagana noodles according to the package directions. When done rinse under cold water, then dry and set aside.
Peel and boil enought potatoes to make 2 cups (about 5 med potatoes) , or use leftover mashed potatoes
while the noodles and potatoes are cooking, dice the onion then saute in 1 cup of butter until translucent
Combine the 2 cups cottage cheese, 1 lg egg, and the ¼ tsp onion salt
In your casserole dish, Layer the ingredients in the following manner:
In the bottom of a non stick sprayed casserole dish, Layer 1: lay down 3 cooked lasagna noodles Layer 2: spread the cottage cheese mixture over the noodles
Layer 3: another layer of 3 cooked lasagna noodles
Layer 4: Mix 1 cup shredded cheddar & 2 cups mashed potatoes, ¼ tsp salt, ¼ tsp pepper and spread over the lasagna noodles.
Layer 5: top with another layer of 3 cooked lasagna noodles
Layer 6: Top everything with the sauted onions and butter
Cover and bake at 350℉ for 30 minutes until hot and bubbly
Serve with sour cream and bacon bits.
