The Best Waffles

Crispy, light and fluffy waffles that are easy to make and taste just like belgian waffles

Equipment

  • 1 waffle iron

Ingredients
  

  • 3 eggs beat well,
  • add in
  • 1 ½ cup buttermilk or soured milk if no sour milk available, add 1 Tbsp vinegar for 1 cup milk.
  • 1 tsp baking soda
  • 1 ¾ cup all purpose flour
  • Beat in:
  • ¼ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ c soft or liquid shortening *I prefer liquid

Instructions
 

  • Beat the 3 eggs well
  • add the buttermilk, baking soda and flour, stir
  • Beat in the sugar, baking powder, salt and shortening
  • Beat everything together until smooth.
  • Spoon into a hot waffle iron and cook until golden brown or to manufacturer directions
  • Makes 6 belgian style waffles
  • Leftover batter may be kept in the refrigerator and used over a week.

Notes

Leftover waffles can be cooled to room temperature then wrapped in plastic and frozen. They reheat well. If you want them to get crispy you can even reheat them in your toaster or toaster oven.
You can easily vary the waffles with your favorite additions such as chocolate chips, blueberries, nuts or even crumbled bacon.  
Serve plain with butter and syrup or with a fruit or fruit compote and whipped cream.
