Prepare the dressing by combining olive oil, lime juice, honey and salt in a small bowl.
Whisk to combine or until sugar is dissolved, if using granulated sugar
Prepare the salad
Peel watermelon and cut into 1" cubes and put into a medium sized colander to drain any excess juice. Once drained, put in a medium to large bowl.
add onion, feta, and mint.
Pour the dressing over the salad and toss gently to combine all of the ingredients. Taste and adjust seasoning if needed (salt).
Serve immediately and enjoy
Notes
This is a quick and easy summer salad and is best served right after you make it. Once it's cut the watermelon will release a lot of liquid, so if you are preparing this ahead, you may want to drain some of the liquid that accumulates off before serving. If you want to bulk up the salad, feel free to add additional greens such as lettuce or cucumber.
