Watermelon Feta Salad
Watermelon feta salad is a great summer salad. The addition of mint and honey make this one even more delicious. It bursts with fresh flavors and is a wonderful cool treat to go with your favorite summer recipes. I have been making this summer fresh salad for a few years now, especially at the cabin when we have family get togethers. It is often requested and there are never any leftovers.
Most weekends in the summer are spent at our cabin at the lake. I always try and make sure I put a watermelon on my weekly grocery list, just in case I have company. Fresh sliced watermelon is a great treat at anytime, but you can elevate the humble watermelon into a crowd pleasing salad with a few ingredients and a short amount of time.
With it’s Mediterranean flavors this refreshing salad is sweet, savory , salty and fresh. The feta cheese gives it that saltiness and the honey and lime dressing balances the salt out nicely. The red onions add a nice tart crunch but feel free to leave them out if you want. If you don’t have fresh mint, you can certainly omit it or substitute for another fresh tender herb, like basil.
Watermelon Feta Salad
Ingredients
- 4 Cups Watermelon cut into 1" cubes
- ½ small red onion sliced finely
- 1 cup feta cheese crumbled or diced
- ¼ cup fresh mint leaves chopped fine
for the dressing
- 2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp Fresh lime juice
- 2 Tbsp honey (or granulated sugar)
- ¼ tsp kosher salt
Instructions
- Prepare the dressing by combining olive oil, lime juice, honey and salt in a small bowl.
- Whisk to combine or until sugar is dissolved, if using granulated sugar
Prepare the salad
- Peel watermelon and cut into 1" cubes and put into a medium sized colander to drain any excess juice. Once drained, put in a medium to large bowl.
- add onion, feta, and mint.
- Pour the dressing over the salad and toss gently to combine all of the ingredients. Taste and adjust seasoning if needed (salt).
- Serve immediately and enjoy
