Whipped Shortbread

These classic whipped shortbread are so tender and delicious. A perfect cookie for Christmas.

Equipment

  • 1 stand mixer or hand mixer

Ingredients
  

  • 1 lb butter
  • 1 cup Confectioner's sugar
  • ½ cup Cornstarch (cornflour)
  • 3 cups all purpose flour
  • 1 tso Vanilla extract

Instructions
 

  • Cream together the 1 lb butter and 1 cup Confectioner's sugar' until fluffy and light colored
  • Add in ½ cup Cornstarch (cornflour) and 3 cups all purpose flour (1 cup at a time and mixing between additions),
  • add 1 tso Vanilla extract and mix in.
  • Using a spoon, drop heaping tablespoons onto a parchment lined sheet tray.
  • Decorate with candied cherries, sliced almonds, nonpareils or sprinkles and bake at 350℉ for 10-12 minutes until lightly browned on the bottom (check edge).
  • Once they are done, transfer to a cooling rack until colled, then store in an airtight container or freeze for up to 3 months.
