Whipped Shortbread
Equipment
- 1 stand mixer or hand mixer
Ingredients
- 1 lb butter
- 1 cup Confectioner's sugar
- ½ cup Cornstarch (cornflour)
- 3 cups all purpose flour
- 1 tso Vanilla extract
Instructions
- Cream together the 1 lb butter and 1 cup Confectioner's sugar' until fluffy and light colored
- Add in ½ cup Cornstarch (cornflour) and 3 cups all purpose flour (1 cup at a time and mixing between additions),
- add 1 tso Vanilla extract and mix in.
- Using a spoon, drop heaping tablespoons onto a parchment lined sheet tray.
- Decorate with candied cherries, sliced almonds, nonpareils or sprinkles and bake at 350℉ for 10-12 minutes until lightly browned on the bottom (check edge).
- Once they are done, transfer to a cooling rack until colled, then store in an airtight container or freeze for up to 3 months.
