Peanut Butter Marshmallow Squares (Confetti Squares)
These easy peanut butter marshmallow squares are a family favorite. With only 4 ingredients and 20 minutes time you can have a fresh batch for whatever occasion (or non occasion) you like. These bars were my sons favorite when he was little. His playschool make a family cookbook as a fundraiser and every child got to select their favorite family recipe to add to the cookbook. This was the one he chose.
These easy bars are a great recipe for beginners and there is really no cooking. You melt the butterscotch chips and peanut butter over a double boiler or alternatively you can use a microwave to accomplish the same result.
Once in the pan, just chill in the refrigerator until they’re set and cut and enjoy. Need a last minute sweet to bring to a potluck or school event? These work perfectly. Just be sure there are no peanut butter restrictions due to allergies if you’re feeding a crowd.

Peanut Butter Marshmallow Squares (Confetti Squares)
Equipment
- 1 9×9 square pan
- 1 double boiler
Ingredients
- 2 pkg butterscotch chips
- ¼ cup butter
- 1 cup peanut butter
- 4-5 cups rainbow marshmallows
Instructions
- melt the 2 pkg butterscotch chips and the ¼ cup butter in a double boiler ¼ cup butter. Stir until there are no lumps. If you don't have a double boiler they can be melted in the microwave on med power stirring every 45 seconds until smooth and melted. Remove from heat
- Add the peanut butter and combine until smooth
- add the marshmallows 1 cup at a time, stirring after each addition. Pour into prepared 9×9 pan and refrigerate until set. About 30 minutes to 1 hour. Slice and enjoy. These freeze well also.
How to make Peanut Butter Marshmallow Squares (Confetti Squares):
The process of making these squares is very simple. First over med-low heat, melt together the butterscotch chips and butter, then add the peanut butter and combine until smooth. You can use a double boiler or the microwave oven (in 45 second increments) if you don’t have a double boiler. Once the mixture is melted and smooth, remove it from the heat and let it cool for a couple of minutes (so it doesn’t melt the marshmallows). Then add the marshmallows 1 cup at a time and stir each addition to coat. Once the marshmallows have all been added, transfer the mixture to a prepared 9×9 baking dish lined with parchment (for easy removal and slicing), then refreigerate for 2 hours or until completely set. Cut into squares and enjoy.
These can be frozen for up to 3 months or kept in the refrigerator for 5 days in an air tight container for all to enjoy.
