Grease a 9-by-13-inch baking dish with butter or nonstick cooking spray.
2. Tear up the croissants into bite sized pieces and spread in the pan, add the ham, and cheese
3. Make the egg mixture
In a large bowl, whisk together the eggs, milk, heavy cream, mustard, salt, pepper, until smooth and well combined.
Pour the egg mixture evenly over the croissants and ham and cheese. Gently press down on the croissants with the back of a spoon so they can absorb some of the custard.

- 6 croissants, torn into bite sized pieces Day old works best
- 5-6 large eggs If you want it more custardy then add the 6th egg, otherwise use 5
- 1½ cup whole milk (or heavy cream and milk)
- 1 cup grated cheese of choice I like swiss and cheddar
- 1 cup thinly sliced ham, cut into about 1" pieces I use deli ham, but any ham will work
- 1 tsp dry mustard powder
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
- powdered sugar (optional)
Instructions
- Lightly spray a 9×13" baking pan with cooking spray (or butter generously)
- Tear the croissants into about 1" pieces and place them into the baking pan in an even layer, then sprinkle the ham pieces over the top, then cover with the grated cheese.
- In a separate bowl, combine the 5-6 large eggs, 1½ cup whole milk (or heavy cream and milk), 1 tsp dry mustard powder, ½ tsp kosher salt and ¼ tsp freshly ground black pepper. Whisk well to combine then pour the mixture evenly over the croissant and ham and cheese base. Cover and refrigerate overnight or at least 4 hours.
- In the morning, preheat your oven to 350℉
- remove the casserole from the refrigerator and cover with foil, bake covered for 30 minutes then uncover and bake for a further 10 minutes until it is golden brown. Remove from oven and let rest for 5 minutes then sprinkle with powdered sugar if desired. Cut into 8 servings and enjoy.
