Easy Tomato Basil Sauce

Most people love pasta, well I sure do but sometimes pasta gets a bad reputation as not being healthy (carbs are bad etc.). Well I am of the belief that a pasta with a simple but delicious sauce IS healthy and this sauce will prove that simple can be delicious.
I always have an abundance of fresh basil in my garden, but if you don’t, most grocery stores sell small packets of fresh herbs. Do yourself a favor and spend a little extra, you won’t regret it. This sauce is so simple that the best ingredients make simple also delicious. It seriously has 4 ingredients. A good quality Italian canned tomato, good quality extra virgin olive oil, fresh garlic and fresh basil. That’s it! In 10 minutes you have a fresh and delicious and I say healthy sauce to put over your favorite pasta. Garnish it with some fresh parmesan and you will be saying Yum!
Easy Tomato Basil Sauce
Equipment
- 1 medium saucepan
Ingredients
- 1-15 oz can San Marzano whole peeled tomatoes *any good Italian tomato will work
- 3 cloves fresh garlic, sliced thin
- 2 Tbsp extra virgin Olive Oil
- 6 leaves Fresh Basil
- 1/4 tsp Kosher salt
- 1/4 tsp freshly ground black pepper
- Fresh parmesan *for garnish
Instructions
- Heat the olive oil over med heat and add the thinly sliced garlic, stirring until the garlic becomes fragrant, but do not let it burn.
- Once the garlic is fragrant add the canned tomatoes.
- Using your hand (or a wooden spoon), squish the tomatoes to break them up in the pan.
- Add the whole basil leaves and reduce the heat to low, let the sauce simmer for 10-15 minutes for the flavors to combine.
- Add salt and pepper, taste for seasoning (adjust if necessary)
- While the sauce is simmering, cook your pasta and drain (reserve the water)
- once the pasta is cooked at 2 servings to your sauce and toss to combine.
- Add a ladle of pasta water, this will also help coat the pasta.
- Serve and garnish with freshly grated parmesan cheese.
