The Best Waffles
These quick and easy waffles are the best waffles I have made at home. If you want a Belgian style waffle without all of the fuss of having to whip egg whites then this recipe is for you. I do have a recipe that does require the whipping of egg whites and you can find that recipe here. But if you don’t have the time or don’t want to be bothered then this is the best waffle recipe for a Belgian style waffle that tastes just like you went to the effort of whipping egg whites into submission, but didn’t!
This recipe is one that you will go back to time and again. It’s the one I make on weekends for my family. Every time one of my kids has a friend or friends over for a sleepover, this is the dish I serve them for breakfast. It’s fancy enough for company (not cereal), yet not too much work either. I always serve them with a fruit compote and whipped cream, but there’s also just good old Maple Syrup on the table too.
I make a full batch no matter how many people I am feeding and then I freeze the leftovers (if there are any) in sandwich bags for a quick breakfast during the week. My kids can pull one out of the freezer the night before, or just toss it in the microwave in the morning. If they do want that crispy texture then I have taught them to put the waffles in the toaster just like a bagel. They crisp up nicely in only a couple of minutes and taste as fresh as they did the morning they were made.
Waffles became a much requested breakfast for my kids’ guests and they all eventually knew that if they had a sleepover, they would also be having waffles. It’s a special occasion breakfast without a lot of fuss. And if you make extra batter and don’t feel like making them all at once, it stores nicely in the refrigerator for up to a week so you can make fresh off the waffle iron waffles any morning, afternoon or evening you like. Breakfast for Dinner anyone! That’s a thing in our house.
Great waffles don’t have to be complicated and you will likely have everything you need to make these in your pantry and fridge.
For the most traditional waffle toppings Maple syrup and butter cannot be beat. Being from Canada, we have the real deal. There are many imitation maple syrups out there, just choose your favorite alongside some fresh creamy butter and yum. Other ways to fancy up your waffles is to make a fruit compote or sauce, add nuts, add a glaze (vanilla), serve with Nutella, fresh berries and homemade whipped cream. I know that in the UK pancakes and waffles are served with golden corn syrup. That’s not something we do in North America, but it might also be worth a try.

Equipment
- 1 waffle iron
Ingredients
- 3 eggs beat well,
- add in
- 1 ½ cup buttermilk or soured milk if no sour milk available, add 1 Tbsp vinegar for 1 cup milk.
- 1 tsp baking soda
- 1 ¾ cup all purpose flour
- Beat in:
- ¼ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ c soft or liquid shortening *I prefer liquid
Instructions
- Beat the 3 eggs well
- add the buttermilk, baking soda and flour, stir
- Beat in the sugar, baking powder, salt and shortening
- Beat everything together until smooth.
- Spoon into a hot waffle iron and cook until golden brown or to manufacturer directions
- Makes 6 belgian style waffles
- Leftover batter may be kept in the refrigerator and used over a week.
