Lazy Perogy Casserole

Lazy perogy casserole is one of those comforting dishes that tastes like grandma made it. This casserole is like a hug on a plate, without all of the work that grandma used to do to make perogies from scratch (even if she never did).

I have been making this recipe for over 20 years, it was given to me by a family friend who got it from her mother. I love when recipes are tried and true and so good that people happily pass them down for generations.

This is more of a winter recipe, but feel free to make it anytime you feel like perogies and don’t want to make them from scratch. Yes you can just go buy a bag of frozen perogies, but trust me, this casserole tastes much better than those, with little more effort.

You can add bacon bits (optional) to the casserole when you are constructing it, however I prefer to serve them on the side so they stay crispy. If you don’t want crispy bacon then by all means go ahead and add them in.

Crock pot Lazy Perogy Casserole:

If you want an even lazier version (or you simply don’t want to heat up the house), you can do all of this in your handy crockpot. Just layer everything as in the recipe, turn it on low and walk away for 2 hours then come back to a ready dinner. Serve it right out of the crock pot along side a dish of sour cream and a dish of crispy bacon bits, for the perfect accompaniments.

Shortcut Mashed Potatoes:

If you happen to have leftover mashed potatoes then that is the perfect time to give this recipe a try. You can skip the step of making mashed potatoes and just heat up your leftover potatoes then add the cheese and seasonings and proceed with the rest of the recipe. If you are making potatoes fresh then just mash them with butter, salt and pepper. No need to add extra milk or cream for this recipe.

If you don’t have leftover mashed potatoes and want to cut the prep time in half then I suggest you try my Instant Pot mashed potatoes. They are perfect and so quick to make, with no more effort than boiling them.

What you need for Lazy Perogy Casserole:

  • Lasagna noodles (not the oven ready ones)
  • Cottage Cheese
  • Egg
  • mashed potatoes (leftover or made fresh)
  • 1 sweet onion (or white onion)
  • butter
  • cheddar cheese
  • onion salt
  • Salt and pepper
  • Optional: Bacon bits
  • Optional: Sour cream

Lazy Perogy Casserole

This casserole tastes just like perogies served the traditional way, loaded with bacon, onions, potatoes and cheddar cheese, with a lot less effort.

Equipment

  • 1 casserole dish, lg

Ingredients
  

  • 9 Uncooked, lasagana noodles
  • 2 cups cottage cheese
  • 1 lg egg
  • ¼ tsp onion salt
  • 1 cup butter
  • 1-2 large sweet onion (or white onion), diced
  • 2 cups mashed potatoes 5 med potatoes, mashed or leftover mashed potatoes
  • 2 cups cheddar cheese, shredded
  • ¼ tsp salt
  • ¼ tsp pepper
  • sour cream, for serving Optional
  • bacon bits, for serving Optional

Instructions
 

  • bring a large pot of water to the boil, and cook the lasagana noodles according to the package directions. When done rinse under cold water, then dry and set aside.
  • Peel and boil enought potatoes to make 2 cups (about 5 med potatoes) , or use leftover mashed potatoes
  • while the noodles and potatoes are cooking, dice the onion then saute in 1 cup of butter until translucent
  • Combine the 2 cups cottage cheese, 1 lg egg, and the ¼ tsp onion salt
  • In your casserole dish, Layer the ingredients in the following manner:
  • In the bottom of a non stick sprayed casserole dish,
    Layer 1: lay down 3 cooked lasagna noodles
  • Layer 2: spread the cottage cheese mixture over the noodles
  • Layer 3: another layer of 3 cooked lasagna noodles
  • Layer 4: Mix 1 cup shredded cheddar & 2 cups mashed potatoes, ¼ tsp salt, ¼ tsp pepper and spread over the lasagna noodles.
  • Layer 5: top with another layer of 3 cooked lasagna noodles
  • Layer 6: Top everything with the sauted onions and butter
  • Cover and bake at 350℉ for 30 minutes until hot and bubbly
  • Serve with sour cream and bacon bits.
